3 heads Bibb lettuce torn in pieces
1 bunch green onions sliced thinly
2 cups orange sections (about 4 oranges) halved
3 tbsps chopped pistachios
DRESSING:
6 tbsps fresh orange juice
2 tbsps tarragon or other vinegar
1 tablespoon extra virgin olive oil
2 tsps honey
1/2 teaspoon dry mustard
Combine dressing ingredients and set aside. Combine lettuce and green onions, tossing gently. Drizzle dressing over lettuce mixture, and toss gently to coat.
Divide lettuce mixture evenly on 8-10 salad plates. Top each with orange sections and pistachios. (Use all the oranges and nuts.) Serve immediately.
